I talked to Dave Rebello when I was considering Webers a few years ago. He said that 40 DCOE side draft webers are only good for stock motor. With a more performance built motor, large bore/stroke/performance cam you would want to go with at least 44mm triple carbs.
Also, he said he could make a pair of SU's perform as well as the tripples. Now if they can perform as well a pair of SU's would be lighter than three webers. Hmm... that may not make a big difference but it couldn't hurt mypower/weight ratio!

I like tripples myself. My car is a 3.0 liter monster and I run 40's with no problems. You have to find a shop that knows the weber Carbs. The car runs great I love taking it out to scare the [censored] out of the honda guys.The plus is they look great when you pop the hood.
