Accelerator Issue on Start-Up

Accelerator Issue on Start-Up
I have an '83 N/A with a N42 block and N47 head.
I just had the MSA 3-2 header installed.
The shop was unable to remove the EGR tube from the stock manifold, so I plugged the header and capped off the EGR inlet.
Upon a cold-start, it seems to idle fine.
However, when pressing on the accelerator, it will reach approximately 2100 rpm then drop to 1500, then 2100 then 1500, then 2100 then 1500, etc.
It will continue to do this for a minute or so.
Then I can slowly begin accelerating until it goes beyond 2100 and it will run fine for the rest of the day -- regardless of the number of starts/stops.
When I start it the next morning, it goes through the same routine.
I've replaced all the vacuum lines under the hood (one at a time to make sure I didn't get any swapped around).
The only issue I ran into was the line coming off the "Dist" setting on the carbon canister wasn't connected to anything.
Similarly, the line coming off the air intake between the AFM and TB wasn't connected to anything.
I found a diagram on "ClassicZCars.com" that shows these to be connected, so I ran a vacuum line from the canister to the intake tube.
This didn't solve the problem, but it didn't hurt or help it either.
Does anyone have any ideas/suggestions?
Thanks!

I'm not sure, but I wouldn't imagine it was adjusted during the R&R of the header. Like I said, it ran fine before the stock exhaust manifold was removed and the header was installed.
Yes, but I'm not sure if it's hooked up correctly.
No I haven't, but I will.
Where can I find a simple vacuum hose diagram?
I've looked through my FSM, but I can't seem to find one.
And when I say "simple", I mean something as simple as this -- but for the ZX:
Thanks!
