It seems like these cars need constant valve adjustment. Is a new valve cover gasket needed every time they're adjusted?

Not really, the rubber ones don't need changed to often, cork ones maybe after 2 times and if its a paper one replace it every time

Welcome to ZDriver!

If you adjust the valve lash correctly, and take care of the motor, you RARELY have to adjust them.

if you are constantly adjusting your valves you have some kind of problem with cam or valve stem wear.
