well since the cones slope up instead of down i think youd havta do something with the hood too because the hood on a the 280zx slopes down

I could possibly look at my two z's and try to figure out how close the headlight cones are... but

I think that if you take off the front bumper on the 280ZX, you will see it has a large open area simular to the older Z-cars. From there, making a custom bumper, or air dam with no bumper might give you that older 240Z look. Then you can put in a horizontal grill of some sort.

Here is a picture right from this web site. this shows a ZX partially put together with a new paint job. It gives you a better idea of what it could look like with no bumper and just a grill.
