Is there a specific goal or reason for gutting it? As in for track purposes?
Obviously stripping it down to the bare under panels will increase noise... think of it as driving in a big steel drum... lots of echos. I suggest leaving carpet in as the weight difference would be unnoticeable (5... maybe 10lbs?).

I'm with Nismo on this. My 510 is stripped down to nothing but bare metal and the noise is awful if you plan to daily drive it. You can hear everything the tires pick up, and the exhaust noise gets amplified which makes conversation near impossible at speeds above 35 mph.
The carpeting in the 510 weighed ~15 lbs if I remember correctly. Not sure what it would be in a 280zx. If I had to do it again, I'd leave the carpeting in. Switch to lighter seats and ditch the rears if you don't plan to have any passengers.
If you want to completely strip the interior, dry ice is your best friend to get rid of the tar. Black spray paint also keeps things uniform, but not really necessary. Don't forget some padding for the bars, as you definitely don't want to hit your head on that bare metal if anything happens while you're driving your Z.

You could put like dynomat down as a clean looking insulation, I think like a square foot of it muffles 3 square feet of the car, it's really good stuff, problem with it is that it semi mushy and silver but I bet you could find a flexible spraypaint to spray the stuff so it doesn't peel.

my car isnt gutted, but i took off all the undercoat and the interior tar. it definatly got more noisey even with all the panels and carpet installed. plus add performance exhaust and im yelling at the passanger to have a conversation. when you get out and you talk to people its hard to hear them. if you want it to look nice, just use a burgandy pad and hand sand down the whole interior metal, then paint with por-15 or single stage automotive paint. shiney and smooth. if you want flat and durable, john deere flat black is awesome, it doesnt chauk like flat black primer does and is very durable. its what the ratrod guys use.
