I used to have a Defi HUD in my old car and I quite liked it. I had long considered getting one again for my Z, but it needs a VSS signal to read from. Someone at Jim Wolf told me that one of the wires (at least on the 280ZXT) going into to the ECU, pin 29, is some sort of speed signal, related to a speed limiter or cruise control or something. But I haven't yet personally confirmed it, nor do I know if it's in an "acceptable format" for the HUD to read.
